Covers the principles of basic food safety and their implementation in the workplace. Suitable for all food handlers in the hospitality industry. Covers: cleaning & sanitising, food handling, temperature control, personal hygiene, pest control and waste disposal. This course is nationally recognised and satisfies the requirements from the unit of competency SITXOHS002A Follow Workplace Hygiene Procedures from the Hospitality Training Package. Upon successful completion students will be issued a Statement of Attainment for this unit. Ideal for those seeking work in the hospitality industry. Req: Pad and pen.

Responsible Serving of Alcohol (RSA)

Learn to serve alcohol in a responsible manner in compliance with relevant liquor legislation.  Explains the problems associated with excessive alcohol consumption and provides strategies to refuse service and prevent problems before they occur.   Accredited by Liquor Licensing Victoria.  Participants receive a manual and certificate.  Req: Notepad & pen.  (3 hours)

A beautifully poured coffee will immediately capture the attention of those who drink it. This new course covers  a quick espresso machine and grinder overview,  milk theory, advanced milk texturing techniques, Latte Art pouring techniques, Latte Art etching designs and Latte Art free pour designs. Pre-requisite: Must have completed “Coffee Making for Hospitality” course. *Req: apron. (3 hours)

Cake Decorating

Cake

 

(10 hours) Basic course in cake decorating, sugar flower moulding. How to decorate a fruit cake, piping work, the art of butter icing and moulded flowers. i.e., forget – me – not, daisies and roses. For the first day students will need a basic tool kit for flower making and basic icing nozzles. A list of tools and ingredients will be handed out in the first class. Requirements: Note pad and pen, container and $30 to give to the trainer to purchase the cake decorating kit.

(5 hours) Discover the secrets of Wholefoods Restaurant from Chef Jay as she divulges the recipes of popular dishes such as lasagne, stuffed mushrooms and vegetable stir fry. Assist in the preparation of wholesome dishes based on fresh vegetables, chickpeas, rice, lentils, herbs and spices. Tastings included.

(10 hours) Our eagerly awaited Indian vegetarian cooking class is back to spice up your life!! This is a two day course covering simple, delicious and nutritious dishes. The first day focuses on the milder North Indian cuisine whilst the second day covers traditional South Indian techniques and tastes. Participate in, and assist with, dish preparation and tasting. A step by step recipe book is included.
